When looking to lose weight, many people try and avoid eating potatoes, because of the associated high carbohydrate content. However, the purple potato, provided it’s cooked in a healthy fat-free way, isn’t likely to cause weight gain and can even help lower high blood pressure, according to researchers from the University of Scranton in Pennsylvania.
The research involved 18 participants who were asked to eat six to eight portions of potato, with the skin, twice a day for a month. While monitoring the patients, researchers noticed that their diastolic blood pressure decreased by 4.3% and the systolic reading decreased down to 3.5%.
